Quick-sear Steak with Herbed Butter
Ingredients:
– Steaks: 2 Prosperity Acres beef steaks (such as ribeye or sirloin), about 1-inch thick
– Salt: to taste
– Black pepper: freshly ground, to taste
– Olive oil: 2 tablespoons
Herbed Butter:
– Butter: 4 tablespoons, softened
– Parsley: 1 tablespoon, finely chopped
– Garlic: 1 clove, minced
– Lemon zest: 1 teaspoon
– Salt: a pinch
– Black pepper: freshly ground, a pinch
Instructions:
1. Prepare the Herbed Butter:
– In a small bowl, combine the softened butter, chopped parsley, minced garlic, lemon zest, salt, and pepper.
– Mix until well combined.
– Place the mixture on a piece of plastic wrap or parchment paper and roll into a log shape.
– Refrigerate until firm, about 15 minutes.
2. Cook the Steak:
– Remove the steaks from the refrigerator at least 20 minutes before cooking to bring them to room temperature.
– Pat the steaks dry with paper towels and season generously with salt and pepper.
– Heat olive oil in a heavy skillet (preferably cast iron) over high heat until very hot.
– Place the steaks in the pan and let them sear, without moving them, for about 3-4 minutes per side for medium-rare, or adjust the cooking time according to your preferred doneness.
– Remove the steaks from the pan and let them rest for at least 5 minutes before slicing.
3. Serve:
– Slice the steaks against the grain.
– Top each steak with a slice of the chilled herbed butter.
– Serve immediately as the butter melts over the warm steak.
