What is a Beef Short Rib and recipe?
What kind of meat are short ribs? It’s not what you might think!
What is a beef short rib? The short rib comes from the plate area, meaning brisket, chuck, or rib area of the steer. Short ribs are a much fattier cut of meat. Which makes put on the grill a great cut. But, in comes the insta-pot because not everyone has time in the middle of the week for the smoker or grill.
I wanted to share this recipe with you to save your week from stress.
First, we’ll season the meat with sea salt. This step helps to build flavor throughout the cooking process. Don’t skimp, you need a generous amount!
Next, we’re going to sear the short ribs and get a nice crust on them – we’ll do this right in the Instant Pot using the Saute setting. Be sure to do this in batches. We don’t want to crowd the pan too much or they will steam instead of brown.
After cooking short ribs on the outside to get a brown crust, remove them and saute the garlic with some oil in the Instant Pot for just a minute.
Add yellow onion and saute the onion before adding the garlic, or adding fresh herbs such as thyme or rosemary. Add fresh homemade bone broth to the insta-pot to get all the drippings from the bottom of the pan.
Let the pressure cooker do its magic. Set the time to 50 minutes and let it do its thing. When done let the ribs sit in the insta-pot for 10 minutes to rest before releasing the lid, the resting stage is key to cooking any meat. Serve with mashed cauliflower for a keto or paleo meal.
